Apple, Pear, and Collard Green Popsicles

These popsicles are so easy to make. They don’t contain sugar but are full of flavor. All the sweetness comes from the apples and the pears. Furtheremore, these popsicles are rich in nutrients, some of which are the following:

Apples: Fiber, Vitamin C, Antioxidant, Potassium

Pears: Fiber, Vitamin C, Antioxidant

Collard Greens: Beta Carotene, Vitamin C & K, Folate, Fiber, Iron, Calcium


Step By Step Instructions:

Using a vegetable scrub, thoroughly wash 4 medium apples, and 4 pears. Also, wash 3 collard greens using your hands. Pat them all dry.

Note: I left the skin on the fruits because they contain nutrients, but they can be peeled as well.

Cut them into chunks. For the collard greens, I removed the stem and piled the leaves on top of one another. Starting from the bottom, tightly roll the leaves upwards and slice it into strips or ribbons. Then, turn it horizontally and cut the strips/ribbons in half.

Place them in a blender and blend until you get a pureed like consistency.

Note: If after blending, the mixture doesn’t come together as a puree but rather looks like small chunks, add about 1/4 cup of filtered water. Give it a blend. If that doesn’t help, add a little more water, but try not to exceed 1/2 cup of water.

I didn’t need to add water to mine since my pears seemed to be ripe and juicy. So it depends on the fruit.

Fill the mixture into ice pop or popsicle molds.

I use the Koji brand. I got mine from Target.

Place the lids on top of each mold and place it in the freezer. At this point, please refer to your popsicle mold’s instructions. Mine says it takes 8 hours for it be ready. So I made mine at night and left it in the freezer over night

Come morning, I placed each individual mold under running warm water for 30 seconds. This allowed the popsicle to loosen from the mold which allowed for easy removal.

Leftovers:

I had some of the extra mixture left in my blender after my molds were filled. So we poured it into a glass and drank it as a snack.

OR

If you have an infant, you may serve it as baby food.

OR

You may add 1/2 cup of cooked Barley, Quinoa, Oatmeal or Lentils to the leftover pureed Apples, Pears and Collard Greens and blend. Makes for  delicious baby food.

OR

You may pour the leftover pureed Apples, Pears and Collard Greens over whole Barley, Quinoa, Oatmeal or Lentils. That too makes for a delicious, nutrient rich meal.

**Leftovers:
